Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- ½ tablespoon ground cinnamon
- 3 medium apples
- 5 Brazil nuts or walnuts, chopped
- 3 eggs
- ½ cup vegetable oil
- 2 cups sugar

- Melted margarine
- Coarse sugar
- Extra chopped Brazil nuts or walnuts
Instructions
- Preheat the oven to 350°F (180°C). Grease and flour a medium cake pan or a tube pan.
- Add two chopped apples, with their peels on and cores removed, to a blender. Add the eggs, oil, sugar, and the peel from the third apple. Set aside without blending yet.
- In a bowl, combine the sifted flour, baking powder, and cinnamon. Set aside.
- Peel and chop the third apple. Place it in a separate bowl with the chopped Brazil nuts or walnuts, and set aside.
- Blend the ingredients in the blender until well combined. Gradually add the flour mixture and blend until incorporated. If the batter becomes too thick for the blender, transfer it to a bowl and finish mixing by hand.
- Fold in the chopped apple and nuts. Pour the batter into the prepared pan.
- Bake for about 35 minutes, or until the cake is lightly golden. Let it cool slightly before removing it from the pan.
- If desired, brush the cake with melted margarine, sprinkle it with coarse sugar, and top with a few extra chopped nuts.
